Fairtrade Lemon Cake Recipe
Ingredients:
- 350g soft margarine
- 350g Traidcraft caster sugar
- 5 large free range eggs
- 350g self raising flour
- Rind & juice of 3 large lemons – Fairtrade if available
- 100 – 150g Traidcraft granulated sugar
Method:
- Preheat the oven to 175°C
- Line a roasting tin with greaseproof paper or baking parchment
- Cream the margarine and caster sugar
- Add the eggs one at a time with a tablespoon of flour with each egg
- Fold in the remaining flour and the lemon rind
- Scrape straight into tin and make top reasonably level with a knife
- Bake for 30 minutes – I have to turn the tin after 15mins in my oven
- While cake is in the oven mix the lemon juice with the granulated sugar
- Pour over the cake as soon as it comes out of the oven and leave in the tin until cool
- Remove paper and cut into fingers – 30 large or 40 small
- Freezes well
Tips:
I usually weigh the eggs in their shells, for a cake like this, and then use the same amount of margarine, sugar and flour
If you want to make a smaller cake, just use 3 eggs and a smaller tin
