Fairtrade Lemon Cake Recipe

Ingredients:

  • 350g soft margarine
  • 350g Traidcraft caster sugar
  • 5 large free range eggs
  • 350g self raising flour
  • Rind & juice of 3 large lemons – Fairtrade if available
  • 100 – 150g Traidcraft granulated sugar

Method:

  • Preheat the oven to 175°C
  • Line a roasting tin with greaseproof paper or baking parchment
  • Cream the margarine and caster sugar
  • Add the eggs one at a time with a tablespoon of flour with each egg
  • Fold in the remaining flour and the lemon rind
  • Scrape straight into tin and make top reasonably level with a knife
  • Bake for 30 minutes – I have to turn the tin after 15mins in my oven
  • While cake is in the oven mix the lemon juice with the granulated sugar
  • Pour over the cake as soon as it comes out of the oven and leave in the tin until cool
  • Remove paper and cut into fingers – 30 large or 40 small
  • Freezes well

Tips:

I usually weigh the eggs in their shells, for a cake like this, and then use the same amount of margarine, sugar and flour
If you want to make a smaller cake, just use 3 eggs and a smaller tin
