Fair Trade Tiffin Recipe

We celebrated Good Taste director Rob’s birthday at the weekend with a fabulous birthday brunch topped off with the most delicious fair trade tiffin! We couldn’t resist sharing the recipe (and a few mouth-watering pictures!) with you…

Ingredients

  • 100g butter
  • 25g Traidcraft soft brown sugar
  • 3 tbsp fair trade cocoa
  • 4 tbsp fair-trade golden syrup
  • 225g crushed digestive biscuits
  • 150g mixture of Traidcraft raisins and Traidcraft sliced apricots
  • 225g fair trade milk or plain chocolate

Method

In a saucepan, melt the butter, sugar, cocoa and golden syrup.

Add the biscuits and dried fruit and mix well, press into a 20cm square tin lined with greaseproof paper.

Melt the chocolate in a bowl over a pan of gently simmering water, pour over the top of the tiffin and smooth out.

Mark into squares and chill in the fridge for an hour or so before serving.


Variations

Use any combination of chopped dried fruit, coconut, nuts instead of the raisins and apricots. A mixture of a couple of these is particularly nice.

This recipe is great for using up leftovers from Christmas and Easter such as plain chocolates, Christmas tree chocolates, Easter Eggs, biscuits such as biscotti, amaretti or lebkuchen.
